The 28th Oishida Town Shin-soba Festival is held in Oishida Town to celebrate the harvest of newly harvested buckwheat (shin-soba) and promote its delicious flavor widely. At this event, nihachi soba (an 80:20 ratio of buckwheat flour to wheat flour) made from the secret, locally preserved native variety Raigoji Zairai is served. Visitors can enjoy carefully crafted soba that embodies the traditional 'three freshly-mades' (freshly ground, freshly made, and freshly boiled) along with 'freshly harvested' and 'warm hospitality (kokorodate).' The venue features a sobagaki (buckwheat dough) corner, soba-making demonstrations, and a local specialties fair, offering an experience fully packed with the charm of soba. Due to recent high temperatures, the harvesting and drying/conditioning work of the buckwheat were delayed, causing the event to be held one week later than usual, but it remains an unmissable event for those eagerly awaiting delicious shin-soba.
